I have a ton of zucchini from the garden that I'm trying to use, and I figured -if I make muffins out of them, why not pancakes!?
L U N C H - Spinach, broccoli, cherry tomatoes, mushrooms topped w/ lentils.
Lentils are the power food!!! Here are the deets....
for 1/4 C (dry) lentils:
-160 calories
-0g fat
-0mg cholesterol
-5mg sodium
-27 g carbohydrate
(-15g dietary fiber -WOW)
(-3g sugars)
-13g protein another WOW!
DINNER - not really having one - a neighbor offered me a snack bag of cookies really late in the afternoon and I accepted (I SO DIDN'T want to!) -So needless to say it spoiled my appetite and I just got myself some e m p t y calories. :(

Whole Wheat Zucchini Pancakes:
Mix in bowl and set aside:
1 1/4 C whole wheat flour
1/2 C sugar
3/4 tsp baking powder
3/4 tsp baking soda
In batter bowl mix:
1 C milk + 2 Tbsp (depending on how thick you want the batter)
1 Tbsp apple cider vinegar
2 tsp vanilla
1 egg
Add dry ingredients, mix
Finely shred 1 small zucchini, add to batter...
Makes 15-20 small pancakes! (I usually just eat them plain because they are pretty sweet)

i need to start adding lentils to my salad! what a great idea...i'm in DIRE need of the protein!! well, atleast the baby is more then me! ha! the salad looks fab!
