( I got this from my friend Tia (who got it from Allrecipes) and made a few modifications)
Ingredients:
1 tablespoon olive oil
1 onions, chopped
2 cloves of garlic
2 teaspoon ground cumin
1 teaspoon dried oregano
1-2 pounds lean ground turkey
1-2 (14.5 ounce) can chicken broth
2 (4 ounce) can diced green chiles
1 (15 ounce) can cannellini
beans, drained
2 (15 ounce) cans red kidney beans
1 bunch minced fresh cilantro
salt and pepper to taste
sour cream
tortilla chips
Directions
1 Heat oil in a large soup kettle over medium-high heat.
Cook onions in oil until tender, 4 to 5 minutes. Stir in
garlic, cumin, and oregano; cook until fragrant, about
1 minute. Add turkey; cook until it loses its raw color.
2 Pour in broth and chiles; bring to a boil. Reduce heat,
cover, and simmer for about 10 minutes.
3 Add beans and cilantro; simmer until slightly thickened, about 5 minutes longer. Season to taste with salt and pepper. Serve topped with crushed tortilla chips and sour cream.
