Breakfast:
2 egg whites, 1 egg w/ onion, mushroom, yellow squash, broccoli & tomatoes. Strawberries & cantaloupe -so good together!
Snack: mini-bagel
Lunch:
Protein & water, banana (before a hike/run)
Post run I had another banana w/ peanut butter and some pistachios.
Dinner:
Tostada: Broiled my corn tortilla, added my mashed red beans, romaine lettuce, onion, tomato, avocado, dallop of sour cream, lime juice (I have missed you lime!) Apples (also drizzled w/ fresh squeezed lime)
Workout:
Tromped around on Mt. Eldon for 2.5hrs. Not sure how far we went -we got kinda lost. :) But I'm starting to feel it!!

your blog is so inspiring! i would really like to know how you prepare your egg/vegetable dishes. do you saute the vegetables first? and i would like your recipe for w/w pancakes. yum!

Yes - my eggs-
I saute the veggies 'till they're pretty much done, then add my egg (whites, usually) right on top and then mix around. Yum!
The pancakes...
this makes about 16-18 small pancakes - depending on how runny the batter is... (sometimes I add more milk if I think it's too thick)
You can also double this if you're feeding a *small* crowd. My guys blow through these...
mix:
1 C milk
1 egg
1tsp vanilla
1TBSP apple cider vinegar (I do 2 capfulls) -really scientific. :)
Add:
1C (heaping) whole-wheat flour
1/2tsp baking powder
1/2tsp baking soda
2 TBSP of sucralose/splenda (or sugar)
We like to plop blueberries in the middle (frozen or fresh)
