Chicken Fajitas - Yellow corn tortillas (I spread plain yogurt on them b/c I was out of avocado), green, red, yellow peppers, onion & chicken breast -w/ garlic salt & chili powder, lemon juice. Apple.

These are the truffles I made Jess for his b-day instead of a cake (He had a cake at the station). They are so 'potent' just one about sends you over the edge.... I used (2) 70% cacao bars and 1 espresso bar - I chopped them up and set them in a bowl. Then I brought about 6 oz. or so of heavy whipping creme to a simmer and poured it over the chocolate, and then added a tsp. of vanilla. You let it sit for a min, and then stir the mixture until it is smooth and creamy. Then you let it cool down and then put it in the fridge for 2 hrs. After they are chilled you take a tsp. and make little balls -(it is a messy process, you have to move fast b/c the choc. will start melting in your hands) Then you chill the balls for several hrs. in the freezer. The last time I made them I just rolled them in cocoa powder. -This time I covered them in milk chocolate per Jess's request. I think next time I will use 60% cacao... If you're not a big dark chocolate fan, I've heard of people using and loving symphony bars.

DINNER:
Jess and I went out for our NINE year anniversary to Busters - a steakhouse in town - We actually went there to celebrate our engagement. -(something we had forgotten about). I got the fajita salad and it was pretty good... I think my fajitas at lunch were much better! :)
