Breakfast:
4 3" whole wheat pancakes (made w/ sucralose) -wasn't planning on having these for breakfast, but made them for the boys and before I knew it, had already eaten 4. So there ya go.

Snack: Protein shake w/ spinach, strawberries, apricots (frozen), 1/2 banana, water

Lunch:
I was 'on the go' so that's why it's in this container - Bed of Spinach, chicken salad, tomato, cucumber, avocado, lime juice, Apple. Y U M!

Dinner:
Tofu stir fry. I love this. Cut up Extra firm tofu into chunks, set in pan and pour yoshida's sauce over and let set while you prep veggies. Then I turn on the pan to med-high and add veggies as I cut...onion, yellow squash, zucchini, sweet red pepper, broccoli. -I also used 1/2 a cooked yam that Jess had brought home from his shift -it was pretty good. I cover and let everything cook for a few min. Then I added about 1/2C of couscous and probably 3/4C water and let cook for 5-10 min. longer, stirring occasionally.
