Breakfast:
Whole Wheat Blueberry Pancakes w/ strawberries & fresh blueberries. Bodie had a friend sleep over (a first!) so, of course, we had pancakes!


Snacks: Whole-wheat pretzel rods
Lunch:
Tofu tacos. -Cook tofu, zucchini, yellow squash, onion & mini sweet peppers in Yoshida's original sauce (covered, med to med-hi for 8 min. or so) Warm corn tortillas, spread w/ avocado, add spinach & then tofu mixture. Delightful! Cherries & blueberries.

Dinner: --- starting my fast - I like to do it lunch to lunch. Somehow that just works for me great!
But I'm S U P E R thirsty right now even though I've already had 50+oz. of water today... :)
Workout:
I attended a funeral this morning and was just feeling really melancholy...so it took me a little bit to warm up.
30 min. on treadmill
-13 min. 4.0 incline, 4.3 speed
-5 min. 0.0 incline, 4.8 speed
-2 min. 6.0 speed
-10 min. 6.5-7.5 speed.
15 min. of rowing. -That's a good workout!

WHOLE-WHEAT (blueberry) PANCAKES
mix:
2 C milk
2 eggs
2tsp vanilla
2 TBSP apple cider vinegar
Add:
2 C whole-wheat flour
1tsp baking powder
1tsp baking soda
3-4 TBSP of sucralose or splenda
mix well and pour onto skillet. For a real treat, add blueberries (frozen or fresh) -SOOOOO YUMMY! :) Makes approx. 24 3" pancakes -They're pretty sweet, but we like them plain.
