Dinner:
I was feeling domestic and had 2 crock-pots going today! :)
Pinto beans in one & a pork roast in another (left over roast -so it was already cooked -but I made a bbq sauce to put in w/ it and a clove of garlic. -Sauce: ketchup(1C), Baja chipotle marinade (1/4C?) , vinegar (2 capfuls), 1 TBSP. brown sugar....sorry Bec - guessing on the measurments!)
I soaked 2 C of pinto beans over night and then drained them this morning, stuck them in the crocker & added 6-8C water, 3 cloves garlic, shakes of: cumin, black pepper, marjorum, red pepper & salt pork (in cubes) Later I tasted and it was pretty bland so I added: 2TBSP of chicken boullon, more cumin & some salt.
Bed of spinach (from the garden!) cucumbers, tomatoes, carrots w/ bbq pulled pork. Pinto beans w/ cilantro & jalapeno corn (cake) muffin that my friend brought over! :)
