NO SOAK PINTOS

INGREDIENTS:
-2 C pinto beans (I have them in bulk)
-6-8C water
-1/2 yellow onion, chopped
-2 celery stalks, chopped
-1 TBSP beef boulion
-1 TBSP chili powder
-1 tsp cumin
-couple shakes of red pepper
-1 can of diced green chilies
-2 TBSP brown sugar
-1 package of turkey kielbasa (DON'T CUT) (you could substitute this w/ salt pork or bacon)

DIRECTIONS:
In a large saucepan, bring pintos & water to a boil at med-high. Let cook for a good hour. (I'll be honest - I never measured the water, just covered the beans a good 2 inches or so)
The water level will probably be pretty low by now, so add 4 or 6 more cups of water and let cook for another hour.
DO NOT DRAIN. -Add more water, if needed & Add the ingredients. -Plop the whole darn kielbasa in too... don't chop it up!

Cover and let simmer (I put it on the 2 or 3 dial) for a good 4 hours - checking, stirring & tasting occasionally. Then I took the plump & juicy kielbasa out and chopped it up- (It had soaked up all the yummy flavors.) and put it back in.
I started it at 8 am & it was ready to go by 2pm. This picture was taken around 5:30ish (I just let it simmer for people to dig into when they wanted) No more worrying about soaking them over night!!!! They turned out perfect.

Top w/ fresh cilantro, (and chopped onion & tomatoes are great!)
