Quinoa w/ Red Cabbage, Edamame & Cherry Tomatoes

Ingredients:

- 1/2c Quinoa
- 2c Edamame
- 1-1.5c chopped red cabbage
- 15-20 cherry tomatoes

Directions:
Cook Quinoa & Edamame per package instructions. (both fast- about 5-10 min boiling time) Meanwhile Chop cabbage and cut cherry tomatoes in half. Drain Edamame, combine all ingredients into a bowl. Sprinkle w/ salt. Makes (4) 1.5 cup servings (give or take)

170 calories, 4g fat, 23g sodium, 26 carbs, 6g fiber, 6g sugar, 11g protein
