GREEK PASTA SALAD
Ingredients:
-4 large ripe tomatoes, chopped
-2 medium cucumbers, cut into chunks
-1 small purple onion, chopped
-2Tbsp fresh chopped cilantro
-4oz low-fat feta cheese, crumbled
-2 cloves of garlic, (press)
-2Tbsp dried oregano
-2Tbsp fresh lemon juice
-1Tbsp olive oil
-2/3c pitted black olives
-Brown rice penne pasta
Directions:
Cook pasta per package directions. Drain, rinse in cold water and place in bowl.
Add first 6 ingredients to pasta. Rub oregano between fingers and sprinkle over the vegetables. Drizzle lemon juice and olive oil over the salad. Add olives and toss gently. Makes 8 servings
