Crispy Chicken Bites
from The Eat-Clean Diet for Family & Kids
Ingredients:
-3 boneless, skinless chicken breasts. (I used 6-7 tenders)
-1/4c oat bran
-1/4c wheat germ
-1TBSP coursely ground flax seed
-1/4c coursely ground almonds
-1/2 tsp sea salt
-1/2 tsp pepper
-pinch of garlic
-1/2c water or low-sod. chicken stock
-1 large egg white, beaten slightly



Directions:

Pre-heat oven to 400'F. Line baking sheet w/ parchment paper or foil.
-Cut chicken into nugget-sized pieces, set aside.
-Combine all ingredients in a large container w/ lid. Mix or shake well.
-Combine water & egg in medium bowl. Dip chicken and then place in coating mixture.
-Place on baking sheet, bake for 15-20 min. or until golden.

For a 'clean' dipping sauce: mix 1.5tsp honey & 1 TBSP of dijon mustard.

Nutrition: (3-4 nuggets) My kids each had 2 servings worth!
100 cal, 3.5g fat, 7 carbs, 370mg sodium, 2g fiber, 0mg chol, ? sugar. (sauce: 13cal, 3 carbs for 3/4tsp)
