EGG CON CORN TORTILLA
any time of day is good for this. :)
Ingredients:

- 3 egg whites
- 2 slices of onion, chopped
- 1.5c spinach- chopped
- 2 TBSP salsa
- 2 corn tortillas
- 1/4 avocado

- 1/4c plain greek yogurt
- cinnamon
- 1 TBSP sliced almonds

Directions:
In a small skillet, (spray w/ pam) cooked onion till transparent. Add egg whites. When almost cooked, add chopped spinach and stir around until wilted. Warm tortillas, spread avocado on both and then transfer egg mixture onto each tortilla.

Nutrition:
340 calories, 13g fat, 468g sodium, 15 carbs, 8g fiber, 8g sugar, 25g protein

Eliminating the almonds and avocado will bring these numbers down to:
207 calories, 2g fat, 465g sodium, 9 carbs, 4g fiber, 8g sugar, 21g protein
